- 50g fresh Citronella

- 50g Celery
- 100g Apple
- 20g fresh fennel sprouts

- Xanthan to thicken

Step by step to prepare the soup
With all the utensils and ingredients ready, we will proceed with preparing the kumquat soup with rhubarb and tomato.
Step 1: Cut the main ingredients
Take the rhubarbs and kumquats, wash them with plenty of water, and cut them. Cut the rhubarbs into small pieces and the kumquats into thin slices.
Step 2: Empty the kumquats
Remove all the bones (the seeds) you will not need.
Step 3: Cut the other ingredients
Now wash and cut into small pieces the cherry tomatoes (should be peeled), the basil sprouts, and fresh citronella.
Step 4: Prepare a syrup
Put water in a pot and let it heat. After that, add sugar and dissolve it, stirring with a wooden pallet until you get a thick substance.
Step 5: Integrate the ingredients into the syrup
Already having the syrup ready, we will add the pieces of cherry tomato, basil, citronella, and some kumquat slices, mix well, and let it rest for 20 minutes until it cools completely.
Step 6: Reserve the syrup
After the syrup is at the right temperature, we will temporarily change the container and reserve it in the fridge.
Step 7: Texturing kumquat
While we liquefy the kumquat or crush it with an electric mixer, we will add the xanthan (a thickener from corn starch). Liquefy until we see a homogeneous mixture. If you do not have xanthan, you can choose to replace it with corn starch.
Step 8: Store the mixture in the fridge
As soon as the mixture is complete, we will place it in a pastry bag, and we will store it in the fridge for about 20 minutes to let the mixture rest and compact more.
Step 9: Blend the rhubarb
Add the rhubarb, celery, apple, and a few basil leaves (medium pieces). Blend until you see that everything looks like pulp. You can help yourself by adding a little water so you won’t force the blender much.
Step 10: Cooking the soup
Then, pour the liquefied rhubarb mixture into a medium pot and place it on the stove at medium heat. Please wait for it to boil a little and remove it.
